Bubba grew up just east of Albuquerque in Edgewood, where early-morning breakfast burritos were a way of life. After years of perfecting New Mexican red and green chile, Bubba brought those dawn flavors to the city with a focus on simple ingredients, big flavor, and fast service. Today, Bubba’s Burros y Burritos serves thoughtfully made, no‑nonsense burritos with crispy potatoes, eggs, and chiles that taste like home.
